This fresh concept is the passion of Italian Head Chef Ivan Simeoli who has carefully crafted each dish with a fresh, artistic twist on traditional Italian cuisine in Britain. Ivan spent his early career training in Massimo Bottura's Osteria Francescana, thereafter gaining 15 years experience in high-profile London restaurants, from the Ambassador Hotel in Bloomsbury to the Royal Academy of Arts and The Wallace Collection alongside Oliver Peyton. From 2016 to 2019, Ivan was the Head Chef at modern Italian restaurant Osteria 60 in Kensington, where he developed innovative techniques and dishes.
